Baking and Pastry Specializations

Bachelors Degree in Hospitality and Restaurant Management

The Baking and Pastry Specialization will prepare students to act as managers or pastry chefs in bakeries, cafés, pastry shops, or other large scale outlets. This specialization is also ideal for those preparing for business ownership in the baking and pastry field. The BA in HRM focuses on developing business, leadership and entrepreneurial skills such as staffing, cost control, and management of bakery operations. The B&P Specialization will allow students to supplement their management skills with advanced skills in artisan breads and pastries, plated desserts and decorative arts such as chocolate, sugar or pastillage. Internships might include opportunities such as managing of a pastry department in a hotel, assistant manager in a bakery, recipe development or dessert catering.

Bachelors Degree in Culinary Arts

The Baking and Pastry Specialization will prepare students to act as chefs, pastry chefs or owners of bakeries, cafes, pastry shops, or large scale outlets such as hotels and wholesale operations. Through the BA in Culinary Arts, students will focus on desserts from a variety of cultures, menu development, kitchen management, and contemporary recipe development. The B&P Specialization allows students to supplement their culinary and kitchen management skills by focusing on advanced garnishing techniques, large scale production, artisan breads, dessert and wine pairing, and decorative arts such as chocolate, sugar or pastillage. Internships might include opportunities in fine dining pastry kitchens, resort pastry departments, and extremely refined bakery and wedding cake operations.
